Hui Chuan's upscale Ridglea Village location is reflected in its prices, but then cheap sushi is usually not a bargain. Diners get their money's worth here, with glowing-fresh cuts of tuna and salmon plus perfectly chewy rolls and delicious, inventive tapas such as artichoke hearts stirred with escargot. Wash it all down with unfiltered nigori sake.
